Baking Monday - Colossal Cookies



Went with an old standby today, Colossal Cookies, named for their ginormous size. Also known as Peanut Butter Oatmeal Chocolate Chip, which is how I describe them to anyone outside of my family. According to my recipe card, Aunt Mary is the one to thank for introducing us to this fantastic cookie. My sister Bonnie has made these her specialty. These cookies taste deceptively healthy, which makes them an excellent breakfast cookie. I guarantee Jeff's packing one or two in his lunch tomorrow because "they go great with tea", which is his latest excuse for taking baked goods to work every day. (Hi, Sweets!)

This is an ideal recipe for a Kitchen Aid mixer. Ordinary hand mixers would cry at the thought of six cups of oatmeal and a jar of peanut butter, but not the K5. The K5 laughs and says, "Bring it".

Colossal Cookies

1/2 c butter, softened
1 1/2 c sugar
1 c brown sugar
4 eggs
1 tsp vanilla
2 c chunky peanut butter
6 c oats
1 c chocolate chips*
2 1/2 tsp baking soda

• Cream butter, sugar, vanilla, eggs
• Add peanut butter and blend
• Stir in oatmeal, chips and soda
• Scoop with ice cream scoop (about 1/4 c dough) onto tray, flatten slightly
• Bake at 350 for about 12-15 minutes

* The recipe says one cup, I say two! Or even better, one cup of chocolate chips and one cup of pb chips. Can also substitute M&Ms.
